Coop’s Drunk and Coconutty Balls-NO BAKE
Ingredients:
12 oz. box vanilla wafers crushed
1 cup chopped pecans
¼ cup melted butter-unsalted
3.5 oz. sweetened coconut (toasted)
1 can sweet condensed milk
1/4 cup rum (or a little more)
1/2 tsp cinnamon
1 tsp vanilla extract
1 tsp salt
confectioners sugar (for hands)
Instructions:
Toast coconut on cookie sheet (tossing every 3 minutes) until golden. Set aside. In a bowl combine crushed wafers, pecans, cinnamon, vanilla, condensed milk, butter, salt and rum. Mix thoroughly. Dust hands with confectioners sugar and roll dough into bite sized balls. Roll balls in toasted coconut, pressing into outer layer of ball and refrigerate for 1 hour. Best served the same day at room temperature (keep refrigerated when not serving). These have a short shelf life so eat them within 24 hours of making.

Made these for our Christmas party. They were sinful good! I will be making them again for New Years. I can’t wait to try some of the oher ones!
made these last night….amazingly easy and good……added more rum for more of a kick!
I like it when you have to eat them in a hurry, as to not waste them.
